Challenge: “Gluten” hides in many places—in product ingredients, manufacturing processes and product packaging. Testing is required to determine if a product contains the amino acid sequences toxic to celiacs. Government agencies are able to test only a small fraction of retail products for the presence of “gluten.”

Solution: Product Testing Program. CSA expands these government efforts by routinely submitting products, purchased at random across the country, to the lowest commercial gluten sensitivity test levels available.
